Ingredients

2 cups cooked chana

1 large plantain quartered

1 diced onion

½ cup chopped scallion

3 grated garlic cloves

1 tbs cumin seeds

1 tbs madras curry powder
-
1 tsp coriander powder
-
¾ – 1 cup coconut cream or milk

½ cup water
-
2 tsp coconut oil
-
2 tsp ginger powder, optional

Handful fresh cilantro, optional

Salt & pepper, to taste
Instructions
Step 1
Cook the plantains first by baking or frying them.
Step 2
Heat the oil and add the onions, cook for a minute, then add in the grated garlic and cumin seeds. Have the flame hot enough to keep everything sizzling, but not burning.
Step 3
Stir in the curry and coriander powders, half the amount of scallion, and the water.
Step 4
Mix in the cooked chana, plantain, ginger powder, salt and pepper. Cook for 2 minutes then add the coconut cream and remaining scallion. Cover and cook for another 3 minutes, until the pot starts to bubble and a creamy consistency forms.
Step 5
Serve in your favourite bowl, garnish with fresh cilantro and enjoy with breadfruit, steamed rice or garlic naan.
