Green Banana Run Up

Ingredients

16 fingers Green banana
4 cups Coconut milk
3 Sweet peppers
2 Carrots
2 Plummy tomatoes
1/2 Small Cabbage
2 Onions
1 cup Scallion
5 cloves Garlic
• Sprigs of thyme
• pimento, salt + pepper to taste

Instructions

Step 1

 I boiled the bananas separately in water as you normally would because I didn’t want to risk the coconut milk evaporating! If you have lots of milk, go ahead and boil them in it.

Step 2

Sauté onions, scallions, thyme, garlic then add coconut milk. Bring that to a boil. You’ll see a custard on top and you’ll taste the flavours!

Step 3

 Add in the bananas first, then stir in the veggies at the end. Cover for 5-7 minutes, allowing flavours to release and veggies to soften a little.

Step 4
