Rosemary Lentil Soup

Ingredients

  • 4 – 5 cups water or vegetable stock

  • 1 cup dried red lentils

  • ½ cup sliced onion

  • 1 tbs cumin seeds

  • 1 tbs olive oil

  • 3 grated garlic cloves

  • Sprig of rosemary

  • 1 teaspoon chili powder

  • Fresh chopped cilantro, optional

  • Salt & pepper, to taste

Instructions

Step 1

Wash the lentils and set aside.

Step 2

Toast the cumin seeds in a non-stick pan on medium heat until you smell the aroma.

Step 3

Add the olive oil, onions, garlic and rosemary. Stir until the onions become translucent and you can smell the rosemary.

Step 4

Mix in the lentils, followed by the water or stock, chili powder, salt and pepper. Cover and cook for 20 minutes on low-medium heat until lentils soften.

Step 4

When the soup is done, infuse with fresh cilantro and serve.
