3-Bean Chili

Ingredients

  • 1 cup cooked red peas

  • ½ cup cooked black beans

  • ½ cup cooked white beans

  • 1 diced onion

  • ¾ cup chopped scallion

  • 1 cup quartered carrots

  • 1 cup diced tomatoes

  • 5 cloves grated garlic

  • 2 – 3 cups water

  • 1 tbs cumin powder

  • ½ tbs chili powder

  • 1 tsp paprika powder

  • 1 tsp apple cider vinegar

  • Salt & pepper to taste

  • Handful of fresh basil or cilantro, optional

Instructions

Step 1

Add red onion, scallion, tomato, garlic, apple cider vinegar, salt and pepper to a pot over medium heat. NO OIL. Keep stirring to prevent sticking.

Step 2

Mix in the carrots next, along with the cumin, chili and paprika.

Step 3

Add the cooked beans, including the water used to boil them. Bring to a boil, then lower the heat and let it simmer for 15 minutes. Puree some beans to thicken or give it some ‘body’ as we say.

Step 4

Stir in the fresh herb of choice just before serving with roasted breadfruit, yellow yam, or brown rice.
