Ingredients

  • 12 avocado slices
  • 4 cups chopped lettuce or mix of greens
  • 2 cups shredded purple cabbage
  • 2 cups julienned red bell pepper
  • 1 cup shredded beetroot
  • 1 large julienned carrot
  • 1 medium julienned cucumber

Instructions

Step 1

Wash, dry chop and julienne all vegetables and add them to a bowl.

Step 2

Slice the avocado. You can put them on a separate plate or add them to the bowl with the other veggies.

Step 3

Add your preferred vinaigrette, peanut ginger or cashew sauce.
