Laava’s Mung Bean Fritters

Ingredients

  • 2 cups mung beans, soaked overnight (No cooking necessary)

  • ¾ cup fresh scallion

  • 7 garlic cloves

  • 1 ½ tbs chili powder

  • ½ tbs cumin powder

  • ½ tsp cayenne powder

  • 1 ½ tsp salt

  • ¼ cup cornmeal

  • ¼ cup all purpose flour

  • ½ – ¾ cup water

Instructions

Step 1

Using a food processor, mix the mung beans and garlic together first for 1 minute on low/dough mode. You should see and feel a coarse, loose mixture. Empty the mixture into a bowl.

Step 2

Add the fresh scallion and spices, cornmeal and flour.

Step 3

Consistently stir the mix while slowly adding water to form a semi-thick batter (it should stretch, but not be too runny/liquid). Set aside for 15 minutes before frying.

Step 4

Prepare your frying pan, heat oil on a medium flame and fry your fritters.

Serve with a side of your favourite sauce.
