Lentils In Ginger Tomato Sauce

Ingredients

  • 4 cups water

  • 1 cup dry brown lentils

  • 1 diced onion

  • 5 cloves grated garlic

  • ⅓ cup chopped scallion

  • 3 sprigs of thyme

  • 3 inch piece fresh ginger

  • 1 large diced tomato

  • ¾ – 1 cup tomato paste

  • Coconut oil

  • Salt & pepper to taste

Instructions

Step 1

Clean and wash the lentils.

Step 2

Heat the coconut oil, onion, scallion, garlic, thyme, salt and pepper. Stir occasionally to keep everything moving fluidly. Mix in the fresh tomato and grated ginger next. (It’s easy to make this recipe oil free by simply omitting it.)

Step 3

Add the lentils, and then the tomato paste. While stirring, add 2 cups of water and allow the lentils to cook.

Step 4

Reduce the heat to a low boil. Cover and let simmer until the lentils are tender, which will take 20 to 35 minutes depending on how soft you prefer them.

Step 5

Add the additional 2 cups of water as needed to thin the sauce to your desired consistency.

Step 6

Top with fresh basil, vegan parmesan, red pepper flakes and enjoy with pasta or rice.
