Roasted Root Vegetables

Ingredients

  • 2 large carrots, cut into ½ inch pieces

  • 2 cups string beans, halved

  • 2 large bell peppers, cut in thick slices

  • 2 medium sweet potatoes, cubed

  • 2 plantains, cut into 2 inch pieces

  • 2 cups pumpkin, cubed

  • 2 – 3 tbs olive oil

  • 1 tbs smoked paprika

  • 5 grated garlic cloves

  • ¼ cup dried oregano

  • ¼ cup fresh thyme

  • Salt and pepper to taste

Instructions

Step 1

Preheat the oven to 400 F.

Step 2

Wash and prepare the vegetables.

Step 3

Combine the vegetables, olive oil, spices, herbs, salt and pepper in a large bowl.

Step 4

Transfer the vegetables to a tray/pan and roast for 45 minutes to an hour, stirring every 15 minutes for even cooking.

Step 5

Add your favourite sauce, or an extra drizzle of oil when finished.
