Ingredients

5 – 6 cups water

3 lbs pumpkin, peeled and cubed

5 grated garlic cloves

3 cardamom seeds

1” fresh turmeric root, peeled and grated

Generous sprig of thyme

1 sprig of scallion

2 teaspoons coconut oil, optional

Salt & pepper to taste

Instructions
Step 1
Heat the oil in your soup pot or one that’s large enough to hold all the ingredients. Add the garlic and cardamom seeds first. Cook for a minute, stirring occasionally to avoid burning.
Step 2
Add the remaining ingredients and bring the pot to a boil. Partially cover the pot so it doesn’t bubble over and create a mess! Cook for 20 minutes. The pumpkin should be tender, and the seasonings translucent.
Step 3
Taste and let sit to cool.
Step 4
Once the pumpkin cools, use a blender to puree the pumpkins for a creamier consistency. You could also leave the consistency as is. Add the yam and your favourite vegetables.

Serve in your favourite bowl, get comfy and enjoy!
