12” Tortilla wrap

½ cup of hummus (heaped)

1 ½ cups of a finely chopped kale and lettuce mix

½ cup shredded carrot

¼ cup shredded beetroot

1 tbs diced onion

3 tbs chopped parsley

A sprinkle of dried oregano

Olive oil
Instructions
Step 1
Wash and prepare all your vegetables. Tip: Shred more carrots and beetroot than you need and store them in sealed containers so it’s even easier and accessible to use.
Step 2
Place your tortilla on a clean, flat surface or in a plate.
Step 3
Spread the hummus onto the tortilla, from the middle toward the edges.
Step 4
Layer the vegetables in this order: mixed greens, carrot, beetroot, parsley, onion. Another method is to mix all the fillings together in a mixing bowl and add the mixture to the tortilla.
Step 5
Wrap the tortilla, carefully tucking in the sides and corners. Great for on-the-go or a quick lunch at home.
