Wild Rice & Mushroom Soup

Ingredients

  • 4 cups vegetable broth
  • 1 cup cooked wild rice
  • 1 lb chopped button mushrooms
  • 1 cup chopped carrots
  • ½ cup chopped celery
  • 1 small onion
  • 5 cloves grated garlic
  • ⅓ cup white cooking wine
  • 3 tbs chopped fresh parsley
  • 1 tbs olive oil
  • Salt & pepper to taste

Instructions

Step 1

Cook the wild rice based on package instructions. The 1:2 ratio of rice to water usually works for achieving soft, steamed rice. 

Step 2

To heated oil, add the mushrooms, carrots, celery, onion, garlic, salt and pepper. Sauté for 3 minutes, stirring occasionally and it’s fine if the mushrooms get slightly charred.

Step 3

Add the cooked rice, white wine, half the amount of parsley plus the vegetable broth and cook for 5 to 7 minutes.

Step 4

The remaining parsley can be used as garnish or stir it in at the very end.
