Ingredients

1 cup lentils

1 medium cucumber

1 small sweet potato

1 diced medium onion

5 cloves garlic, grated

Handful fresh thyme

2 bay leaves

1 ½ tsp mustard powder

5 cups water

Salt and pepper, to taste

2 tbs coconut oil
Instructions
Step 1
Heat coconut oil in a medium-sized pot. Sauté the onion, garlic, thyme and chopped cucumber for 2 minutes on a medium flame.
Step 2
Add the lentils, water, bay leaves, and the desired amounts of salt and pepper. Stir it all together, cover the pot and bring soup to a boil. Reduce to a low flame after the mixture comes to a boil. Stir, cover and allow to cook for another 15 minutes.
Step 3
Separate and purée half of the soup. Return the puréed portion to the pot, stirring and evenly mixing everything together. Taste. Add more spices, salt or pepper according to your own taste.
