4 ears of corn

1 cup extra virgin olive oil

1 stick vegan butter

11 cloves grated garlic

⅓ cup fresh thyme
Instructions
For the Garlic Coconut Oil & Butter
Step 1
In a saucepan, combine the coconut oil, butter and grated garlic. Turn the heat down low and allow the ingredients to simmer for 5 – 10 minutes. Stir in the fresh thyme at the end.
For the Grilled Corn
Step 1
Light up the grill.
Step 2
Soak the corn for 10 minutes in a light broth made from scallion, thyme, garlic, pimento, with salt and pepper to taste.
Step 3
Use a brush to apply the first coat of garlic oil and butter. Transfer the corn cobs to a grill rack and cook, turning occasionally with tongs, for 15 minutes.
Step 4
When the corn is done, apply another coating of the garlic oil and butter. Another way is to transfer the corn to a large bowl and pour over the oil butter mixture, completely and evenly coating each ear.
Step 5
Sprinkle with more fresh thyme or cilantro before serving.
