Ingredients

4 cups cooked (or canned) ackee

2 cups coconut cream (Substitute: 1 ½ cups coconut milk)

1 sliced medium bell pepper

1 cup chopped onion

½ cup chopped scallion

½ cup diced tomato
-
½ tsp ground pimento
-
7 grated garlic cloves
-
4 sprigs of thyme
-
Salt & pepper to taste

1 tbs Coconut oil
Instructions
Step 1
Heat the oil and add onion, scallion, garlic and thyme. Sauté the seasonings for a minute then mix in the bell pepper, tomato, pimento, salt and pepper. Sauté for another 2 minutes until the peppers are lightly cooked.
Step 2
Slowly stir the ackee into the pot, mixing all the ingredients together.
Step 3
Add the coconut cream. Give it a stir, reduce to a low flame, cover and cook for 5 minutes. When you open the pot, the sauce should release a comforting aroma, look and feel creamy with plenty of flavour.
Step 4
Serve with a side of roasted breadfruit, boiled green bananas, fried green plantains or your favourite pasta!
